A Bit of History
 and a Touch of Legend

Popular legend (especially after the film Vatel starring GĂ©rard Depardieu) claims that the famous courtier invented Chantilly cream one evening out of desperation, lacking eggs for a proper mayonnaise. A good story, but not quite true


In fact, François Vatel was the majordomo of the Prince of CondĂ© — more of a maĂźtre d’hĂŽtel than a cook. He certainly didn’t invent the cream that bears the name of Chantilly today.

Food historian Pierre Leclercq traced the origins of sweetened whipped cream back to England in 1545, where a recipe referred to it as “milk snow.” It spread across Europe during the Italian Renaissance, long before being associated with Chantilly.

It wasn’t until the 18th century that the name “Chantilly cream” began appearing. In 1784, the Baroness of Oberkirchdescribed the festive banquets held at the Hameau of the chĂąteau and mentioned this exquisite cream served on such occasions. From there, the name stuck — and went global.
